How to Choose & Use High-Phenolic EVOO Safely

  • Look for certification or lab-tested phenol levels (≥250 mg/kg).
  • Harvest date: Fresh oil (less than 12-18 months old) has highest phenols — like our 10/12/22 harvest.
  • Store in a cool, dark place in dark glass or tin.
  • Use raw or gently heated to preserve polyphenols; avoid deep frying.
  • Caution: If you have gallstones or gallbladder disease, consult a doctor before consuming large amounts.
